Our tour often starts with a visit to the nursery where very young oysters enjoy the slightly warmer and nutrient rich environment of an estuary. Here you will learn how a floating upweller system is used to prepare the little ones for their move out to the farm on the bay.
It’s a steam out of the Royal River and onto Casco Bay to visit our farm. See how the craft of oyster farming is practiced and learn why chefs consider Maine oysters to be among the world’s best. While on the farm you will learn how to purchase, shuck and serve oysters confidently at home.
A spin around Casco Bay always affords wildlife viewing opportunities. The rich algae that feeds our oysters also provides the photosynthesizing base for a diverse food web. We see vast shoals of Menhaden around the farm, and these silvery filter feeding fish are never alone.
Depending upon the day and tide, we may also visit neighboring farms and try their oysters. These farmers will almost certainly demand to be compensated (usually in the form of beer or wine). This will allow you to become familiar with the origins of other oysters when they appear at your favorite oyster bar.
